Sweet Peach Berry Smoothie

I know I have a winning fruit smoothie recipe when my oldest daughter who normally does not like fruit smoothies says, “I would willingly drink that every morning.” Eli also had a two-thumbs up response. He said, “That was a very good smoothie, I loved it. I want to drink that smoothie every day.” Mimi, the harshest critic in the house also chimed in with, “Good.” If Mimi says it’s good, then I know it’s good!
When making a great fruit smoothie you have to start with great fruit. If you’ve ever tasted a greenish yellow banana compared to one with brown speckles, you know the sweetness level in each one will vary. Choosing ripe fruit, preferably picked at its peak, will always be the most ideal fruit to use in smoothies. The riper the fruit, the sweeter it is. Unripe fruit will always be meatier and chewy in texture and less sweet because of its higher starch content. As the fruit ripens the naturally produced fructose increases and the starch decreases.

Today I have a Peach Berry Smoothie for you made with local ripe peaches, frozen strawberries, vanilla coconut milk, and some ice. This smoothie is ridiculously delicious with no added sweetener. Keep in mind if you use peaches that are still firm to the touch your smoothie will not taste very sweet. Because the recipe uses vanilla coconut milk, which compliments the peaches, this smoothie recipe is wonderful for anyone who has a dairy-intolerance.
As a final tip, I’m noticing here in the Pacific Northwest peaches are on sale right now, which means now is the time to make this wonderful late summer drink! Enjoy!

    • 3 large ripe peaches, outer skin left on but with pits removed
    • ½ cup frozen strawberries
    • 1 cup vanilla coconut milk
    • 1 cup ice cubes
