Mother’s Day is quickly approaching and do you know what I want? I’m going to tell you regardless of your answer. I want to wake up Mother’s Day morning in silence when my body is ready to wake up and not by the jolting sound of the radio alarm suddenly turning on. I also want to wake up without having to run out of the door quickly or having to drive someone somewhere.
I’m going to tell you what I always tell my kids every year because they ask. I want peace. I want my family to intentionally work towards giving me a day of peace.
Aside from this chocolate is a close second. I know many of you will be receiving beautiful handmade cards, World’s Greatest Mom mugs, and hopefully breakfast in bed. But sometimes us moms must take matters into our own hands. Breakfast is a wonderful start to Mother’s Day but it is equally nice to finish the day off strong. Wouldn’t the day feel more complete eating spoonfuls of warm chocolate cake with a chocolate liquid center oozing out after the children have gone to bed? Who is with me on this?
I propose we moms to do what we do best: take matters into our own hands. I’ve created a single serving molten lava cake that can selfishly be enjoyed by one person or shared with another. However, this recipe is all about making just one. Because for one day out of the year we get to make it only about us. And you deserve it.
I’m also sharing five other recipe ideas you will feel inspired by to make for Mother’s Day from Kitchen Explorers. Hopefully you won’t be making any of them. Instead, you’ll be in bed and someone will be bringing you one of the dishes they “found” on the internet when you “accidentally” left your browser open to this page.
As for the lava cake, this recipe is a keeper. Lava cakes are extremely easy and quick to prepare as well as impressive when plated with a little garnish.
On Mother’s Day go ahead and sleep in. But if no one volunteers to make this cake recipe then feel free to make it for yourself. It will be good for everyone, because we all know that if mama isn’t happy, nobody is happy.
