For young enthusiastic kitchen explorers there is no better time than now to flex your creative abilities in making sweet holiday treats to eat and give away. For the past year my oldest daughter Abbi (age 12) has been taking it upon herself to cook up batches of sweet confections without any help from me, which I love seeing her do. My only request of her has been that she cleans up everything after she’s done.

Abbi has her favorite recipes she that she likes to make over and over again. She gains confidence every time she makes one of her special treats. She is most known by her family, close friends and teachers for her amazing fudge. She fell in love with fudge after buying some at an Oregon seaside resort town that sold about twenty different varieties. She bought a small block of rocky road fudge and likes to brag that she ate it all in one hour.
Since then she enjoys making homemade fudge because “it’s easy and lasts a long time.” Most of the time when she makes a batch it is to give away to others and share with friends. She also enjoys making it with friends.

Recipe: Easy Homemade Rocky Road Fudge
Easy Homemade Fudge Recipe- This recipe only takes a few minutes to prepare and is so easy to make with four simple ingredients: chocolate chips, condensed milk, almonds and marshmallows!
Ingredients
- 3 cups semisweet chocolate chips
- 1 (14 ounce) can sweetened condensed milk
- 2 cups mini marshmallows
- 1 cup slivered almonds
Instructions
- Add the chocolate chips and condensed milk to a large microwave-safe bowl.
- Cook chocolate mixture on high for 2 minutes and stir. Continue to cook the chocolate mixture in 1 minute increments making sure to stir between each one until smooth.
- Line a 13x9 inch baking pan with parchment paper or foil and spray all sides with non-stick cooking spray.
- To prevent the marshmallows from melting in the hot chocolate mixture, allow the fudge to cool to room temperature before folding in the marshmallows and nuts.
- Transfer the rocky road fudge to the prepared baking pan and press down and smooth out if necessary.
- Refrigerate the fudge until set before cutting into 116 1-inch or 58 2-inch pieces.
